It’s almost June! That means we are about to have an abundance of fresh Garlic Scapes! Garlic scapes are the flower bud of the garlic plant. Scapes taste just like garlic. They can be used in exactly the same way as garlic in any recipe. Our favorite way to enjoy them is with Garlic Scape Pesto & Pasta! Here’s the recipe we use:
1 cup garlic scapes (8 or 9 scapes) top tip of flower removed, cut into 1/4-inch slices
1/4 cup sunflower seeds (or walnuts, pine nuts, cashews, etc.)
3/4 cup olive oil
1/4 to 1/2 cup grated Parmigiano-Reggiano cheese (optional, we don’t use cheese in ours)
1/2 teaspoon salt, or to taste
Place the scapes & sunflower seeds in the bowl of a food processor & whiz until well combined & somewhat smooth. Pour in olive oil, salt & cheese, whiz again. Add to pasta, sandwiches or use as dip for crackers! This pesto also freezes well; if planning to freeze, do not put cheese in before freezing. If you want cheese, just add in after pesto is thawed.
